When to start trimming?

Hi all, I've got this snack bell pepper bonchi who's doing very well. The main new stem is growing a bit tall however, and I am not sure if this is too early to start trimming it.

When can I start trimming the bonchi's without stunting their growth? Any tips on trimming are also appreciated!
