Every time I order Alfredo, the sauce is either too bland, too watery, or just not right. In this video, I’m showing you how to make a Chicken Fettuccine Alfredo that is rich, creamy, and packed with flavor.
We start by searing chicken breasts seasoned simply with salt and pepper to get a beautiful crust. The real magic is in the sauce: we sauté red onions and garlic, then simmer them with cream and plenty of butter. The secret to the texture?
A specific 3-Cheese Blend of Parmesan, Reggiano, and Grana Padano that makes the sauce absolutely bang on!

▸ Chicken Breast (Butterflied)
▸ Salt & Black Pepper (Only!)
▸ Olive Oil (for searing)

🧅 The Base:
▸ 1 Red Onion (Finely chopped)
▸ 3 Cloves Garlic (Chopped)
▸ Olive Oil
.
🥛 The Sauce:
▸ Cream (10% Blend or 30% Heavy Cream)
▸ Butter (2 generous knobs)
▸ Salt & Black Pepper
.
🧀 The Secret Cheese Blend:
▸ Parmesan
▸ Reggiano
▸ Grana Padano
.
🍝 The Rest:
▸ Fettuccine Pasta
▸ Fresh Parsley or Cilantro (Chopped)
▸ Lemon (for a fresh squeeze)

📝 INSTRUCTIONS:

▸ 1. The Chicken
Butterfly the chicken breast and season with only salt and black pepper. Press the seasoning in. Sear in olive oil until it develops a beautiful golden crust. Slice and set aside.

▸ 2. The Aromatics
In the same pan (don’t wash the flavor away!), add oil and sauté the finely chopped red onion until soft. Add the chopped garlic.

▸ 3. The Cream
Pour in your cream (10% or 30%) and bring to a simmer. Add salt, pepper, and the butter. Let it thicken slightly.

▸ 4. The Secret Step
Once the sauce thickens, add your 3-cheese blend (Parmesan, Reggiano, Grana Padano). Stir until smooth and melted.

▸ 5. Unite
Dump in your cooked Fettuccine pasta and toss until every noodle is coated in that creamy gold.

▸ 6. Serve
Plate the pasta, top with the sliced chicken, garnish with parsley/cilantro, and finish with a squeeze of fresh lemon and extra cheese.
