On cold winter days, there’s nothing better than warming up soup 😊
Ingredients (for 2-3 servings):
Oil (necessary amount)
Water
5 red red tomatoes in half
1/2 onion
Fresh parsley
500 g of minced meat
2 tablespoons of tomato concentrate (mashed or tomato paste)
1½ cup of vegetable broth
8 sheets of pasta for lasagna
Salt, pepper, garlic powder and paprika (to taste)
1 more cup of water or broth (if the pasta needs more cooking)
Optional: bechamel sauce
Sliced parsley (to taste)
50 g of pecorino cheese
100 g of Parmesan cheese
Heat a little oil in a large frying pan and add the tomato in half, a little water and the onion. Cover until tender. Remove the skin, crush and add the minced meat and cook for a few minutes until it is golden brown.
Add the tomato paste, the tomato puree or passata the broth and the chopped lasagna slices. Cover and let it cook, stirring several times. Add béchamel sauce and season with salt, pepper, garlic powder and paprika to taste. Finally add the cheeses and the chopped parsley.
