Pepper Steak
Ingredients
• 1 lb flank steak, thinly sliced against the grain
• 1 green bell pepper, cut into squares
• 1 red bell pepper, cut into squares
• 1/2 onion, cut into squares
• 2 tbsp oil, divided
• 1 tsp minced garlic
For the Vegetables
• 1 tsp rice wine
• 1/8 tsp salt
• 1/8 tsp sugar
Meat Marinade
• 1 tsp dark soy sauce
• 2 tsp light soy sauce
• 1 tbsp rice wine
• 1 tsp baking soda
• 1 tsp sugar
• 1 tbsp cornstarch
• 1/8 tsp black pepper
• 4 tsp water
• 1 tbsp oil (added last)
Sauce
• 1 tbsp dark soy sauce
• 2 tbsp light soy sauce
• 1 tbsp cornstarch
• 1/3 cup water
• 1 tsp sugar
• 1 tbsp rice wine

Instructions
1. Marinate the steak
Slice the flank steak thinly against the grain. In a bowl, mix all the marinade ingredients except the oil. Add the steak and toss well. Add the oil last, mix again, and let marinate for 15–20 minutes.
2. Cook the vegetables
Heat a wok or large skillet over medium-high heat until very hot. Add 1 tbsp oil, then add the bell peppers and stir-fry for 1–2 minutes.
Add the onions and cook for another 1 minute, stirring constantly.
Add the rice wine, salt, and sugar. Stir well, then remove the vegetables from the skillet and set aside.
3. Cook the steak
Add the remaining 1 tbsp oil to the hot skillet. Once hot, add the marinated steak. Stir-fry constantly until the meat is mostly cooked and no longer pink.
4. Add garlic & sauce
Add the minced garlic and stir for 10–15 seconds until fragrant.
Pour in the sauce and cook for about 1 minute, stirring until thickened.
5. Combine & serve
Return the peppers and onions to the skillet. Toss everything together until well combined. Turn off the heat and serve over steamed white rice.
