This crispy Mooli Papdi is a unique twist on radish snacks. Fresh mooli is grated and lightly sautéed with jeera, black cumin, ajwain, and chilli flakes. It’s then mixed with finely ground suji to form a dough. Rolled thin, cut into small discs, and deep fried till golden and crunchy.
A perfect evening snack with chai, light on spices but big on taste. Easy to make and great for festive platters too.
Ingredients
– Mooli (Radish), grated
– Oil
– Jeera
– Black cumin (Shah jeera)
– Ajwain
– Chilli flakes
– Salt (to taste)
– Suji (Semolina), finely ground
– Oil for deep frying
Steps
1. Heat a pan and add a little oil.
2. Add jeera, black cumin, ajwain, and chilli flakes. Let them crackle.
3. Add grated mooli and sauté for 2–3 minutes until slightly soft. Switch off the flame and let it cool.
4. Grind suji into a fine powder.
5. In a bowl, add powdered suji, salt, and cooked mooli. Mix well to form a firm dough.
6. Roll the dough into a thin large roti.
7. Cut small poori-shaped circles using a cutter or lid.
8. Deep fry on medium flame until golden and crispy.
9. Drain on tissue paper and serve hot with chai or chutney.
