Mirchi Bajji Recipe
Ingredients:
Jalapeño – 8 to 9
Besan / chickpea flour – 1 cup
Rice flour – 1/2 cup
Turmeric – 1/4 tsp
Red chili powder – 1/2 tsp
Salt
Baking powder – 1/4 tsp
Ajwain
Oil for Deep fry

For Serving:
Chaat Masala
Cumin powder
Finely chopped onions
Salt
Chilli powder
Lemon Juice
Procedure:
Wash the chillies, cut them in half, and remove the seeds.
Grind ajwain and salt, then apply this mixture inside the chillies. Keep aside for 5 minutes.
For the batter:
Take a mixing bowl and add besan, rice flour, turmeric powder, red chilli powder, ajwain, and baking soda. Mix well.
Add sufficient water gradually and mix to form a soft, smooth batter.
Check the batter consistency.

Frying:
Take a chilli, dip it into the batter, and gently drop it into hot oil.
Fry on medium to high heat, turning both sides, until golden and crisp.
Once the bubbles reduce, remove and place on a serving plate.

Serving:
Sprinkle chaat masala and cumin powder on top of the bajjis.
Serve hot mirchi bajji with chopped onions mixed with salt, chilli powder, and lemon juice.
