In this video, we show you a Viazi Karai Recipe. Viazi means ‘Potato’ in Swahili, and Viazi Karai is a popular snack in Kenya and especially Mombasa. The Viazi (potatoes) and first boiled and then coated in a thick batter before being fried until golden and crispy.
In our recipe, we show you a super delicious version of Viazi Karai where we add a chili and lime paste to the boiled potatoes before coating in the batter. When you bite into the Viazi Karai, you get a crispy outer coating, followed by a soft and fluffy boiled potato and in our version you get that awesome burst of Chili and Lime!
For the Viazi Karai Recipe, you will need:
Boiled potatoes (in salted water)
1 cup all-purpose flour
salt to taste
pinch of yellow food colour
enough water to form into a thick batter (as shown in the video)
For the Chili and Lime paste, you will need the following as per your taste:
salt
chili powder
paprika
zest and juice of lime
These Swahili Viazi Karai are a favourite Kenyan snack and especially popular during breakfast. The traditional version of Viazi Karai does not contain the Chili and Lime paste, however, you can add any flavouring as you wish. The main concept of the Viazi Karai Recipe is having boiled potatoes coated in a thick flour batter. They really incredibly delicious and also go well as a side dish at a barbecue!
