    Ingredients🛒🛍️

    For the Chilli Mix🌶️
    • Red chilli flakes
    • Sesame seeds
    • Black pepper powder
    • Spring onion
    • Garlic, finely chopped
    • Salt, to taste
    • Powder sugar
    • Kashmiri red chilli powder
    • Soy sauce
    • Vinegar

    For the Oil Infusion🫙
    • 1 cup oil (any neutral, unflavoured oil)
    • Cinnamon stick
    • Bay leaf
    • Whole black peppercorns
    • Cloves
    • 1 onion, roughly chopped
    • 1-inch piece of ginger

    Method
    1. In a heat-resistant bowl, combine all the ingredients listed under the chilli mix. Add vinegar and soy sauce, and mix well. Set aside.
    2. In a pan, heat the oil on a low flame until it is warm but not smoking.
    3. Add all the ingredients for the oil infusion to the warm oil. Sauté gently on low heat until the aromatics turn lightly golden and release their fragrance.
    4. Switch off the flame and allow the oil to settle for a few seconds. Carefully strain the hot infused oil over the prepared chilli mixture.
    5. Stir thoroughly to ensure all the spices are well combined.
    6. Allow the chilli garlic oil to cool completely, then transfer it to a clean, airtight container.
    7. Store in the refrigerator and use as required.

    Tips✨
    • Keep the flame low to avoid burning the spices.
    • Let the oil cool completely before storing.
    • Stays good for 2–3 weeks when refrigerated.
