My experience pruning young chilli plants has not been good, they don’t recover well and just end up short and bushy. I experimented this year and the ones I topped have not done well and their fruit production is significantly less than the ones not topped (Jalapeños)
I will not be pruning/topping my plants next year and would recommend you let nature take its course with your Cayenne’s
