The Lazy Way to Make Green Chili Flakes: No Sun, No Oven! 🌶️❄️
Have you ever left for a trip and forgotten fresh produce in your fridge? Usually, that’s a disaster—but with green chilies, it’s a Preservation Miracle. Recently, before leaving for Odisha, I washed some fresh green chilies, patted them dry, and spread them on a tray in the fridge. Two months later, I returned to find the perfect “Freeze-Dried” chilies.
Why the Fridge Method Works?
Refrigerators are naturally low-humidity environments. By leaving the chilies uncovered, the cold air slowly draws out the moisture. This is a form of Slow Dehydration that preserves the vibrant green color and the spicy heat (Capsaicin) better than high-heat oven drying.
The Benefits of Green vs. Red Flakes
Vitamin C Retention: Unlike red chili flakes (which are often sun-dried for long periods), green chili flakes retain more Vitamin C and Beta-carotene because they aren’t exposed to oxidation from heat.
Brighter Flavor: Green chili flakes have a “zesty” and fresh heat that pairs perfectly with pasta, pizza, and even salads.
Gut Friendly: Green chilies are often easier on the stomach than processed red chili powder.
How to Make Your Own
Prep: Wash your chilies and wipe them bone-dry with a cloth.
Spread: Place them in a single layer on a tray. Do not cover them.
Patience: Leave them in the back of the fridge for 6-8 weeks.
Grind: Once they snap like a cracker, pulse them in a blender for 2 seconds. Store in an airtight jar!

Ravneet, i am so frustrated with corriander.
Here in Toronto, we cannot go too often to get groceries.
Corriander doesn't last more then 2 days. It starts rotting right away.
Any tips would highly be appreciated.
