Slow Cooker Beef Chili Recipe

olive oil
2 lbs ground beef, browned
2 packets chili seasoning (mild or medium)
1 packet chili seasoning (hot)
1 large onion, diced
2 tbs tomato paste
1 can adult beverage of your choice or 1 cup beef broth
2 packets chili seasoning (mild or medium)
1 packet chili seasoning (hot)
1 large red bell pepper, diced
1 can (15 oz) fire roasted tomatoes, drained
1 can (15 oz) corn
1 can (15 oz) black beans, drained not rinsed
1 can (15 oz) kidney beans, drained not rinsed

1. In a large frying pan, brown the ground beef. Drain off excess fat and set aside.
2. Drizzle a bit of olive oil in the same pan and sautee the diced onion until aromatic and translucent.
3. Add tomato paste to the pan, mix with the onion and cook until they look well combined.
4. Add the beef back into the pan, add the broth.
5. Simmer for 5-10 minutes.
6. Add all chili seasoning packets, stir and heat until well combined.
7. Pour all contents of pan into slow cooker, add beans, diced bell pepper, fire roasted tomatoes, corn, and beans.
8. Set for either 4-6 hours on high or 6-8 hours on low.
9. About 1 hour before the end, taste it and make any flavor adjustments.
