The slow cooker used in the video is Hamilton Crock pot – 6 quart, Can also be used in Instant pot at slow cooking setting.
Ingredients:
1 medium Onion (chopped)
3 cloves of Garlic (minced)
2 medium Roma Tomato (diced)
1 medium Green Bell pepper / Capsicum (diced)
1 no small Sweet potato (Peeled and chopped)
2 nos Carrot (diced)
1 no Jalapeño, chopped and deseeded (optional)
1 + 1/4 cup tomato sauce
5 cups Vegetable broth OR Water
1.5 cups Dry Quinoa
1 cup Red Beans (Soaked for 4 hrs) OR any type
1/2 cup Fresh corn OR Frozen
1.5 tsp Salt
1.5 tsp Chili powder
1 tsp Coriander powder
1/2 tsp Smoked paprika
1/2 tsp Cumin powder
1/2 tsp Black pepper powder
1/4 tsp Oregano
1/4 cup Cilantro, finely chopped
TOPPINGS:
1/2 cup Avocado, chopped
2 tbsp Cilantro, finely chopped
Few drops of Lemon juice
