Why is some guacamole from Mexican restaurants un-naturally super light green?

This isn't the best example, sometimes it's even lighter a various places. It almost looks artificial.

    When I make flautas I blend my avocado with crema 50/50. Add white to green and you get something similar to this.

    Sometimes they mix tomatillos, cilantro, and other chilies to save on avocado in the guacamole; that’s where the slightly artificial color or brighter green comes from
