π Ingredients (2 servings):
* 500 grams prawns (peeled and deveined)
* 1 onion
* 2 red peppers
* 1 red chili
* 1 small piece of ginger (about 1 tbsp)
* 4 garlic cloves (about 1 tbsp)
* 1/2 tsp chili powder
* 1/4 tsp salt
* 2 tbsp cornstarch
* 2 tbsp Shaoxing cooking wine
* 2 tbsp sweet chili sauce
* 1 tbsp soy sauce

π Preparation:
1. Cut the onion into strips.
2. Cut the red peppers into bite-siced pieces.
3. Cut the Chili into small rings.
4. Finely grate ginger and garlic and mix it into a paste.
5. Peel and deveine the prawns and marinate with half of the ginger-garlic paste, chili powder, salt and cornstarch and mix everything well.
6. In a small bowl combine Shaoxing cooking wine, soy sauce and sweet chili sauce and stir to combine.
7. Heat enough oil in a wok or pan to deep-fry the prawns. Test the oil by holding a wooden chopstick in it β it should bubble around the stick. Add the prawns in batches and deep-fry, stirring occasionally, for 3β4 minutes until golden and crispy.
8. Remove the prawns with a slotted spoon and place them on a wire rack or paper towels to keep them crispy.
9. Carefully pour out most of the oil from the wok or pan, leaving just 2β3 tablespoons.
10. Turn the heat to high and add the onion, red pepper, and chili. Stir-fry for 30 seconds until fragrant.
11. Add the remaining half of the ginger-garlic paste and stir-fry for another 30 seconds.
12. Add the prawns back to the wok and toss everything together until well combined.
13. Pour in the sauce and toss everything together until the prawns and vegetables are evenly coated.
