LOADED PAKORA CHAAT

Ingredients

1 cup gram flour (besan)
½ cup rice flour (for extra crispiness)
1 small potato, grated
1 small onion, thinly sliced
1 green chili, finely chopped
¼ tsp turmeric powder
½ tsp red chili powder
½ tsp cumin seeds
Salt ½ tsp
Water as needed
Oil for deep frying

For Chaat Toppings

1 cup boiled chickpeas
½ cup boiled and cubed potatoes
½ cup yogurt, whisked
2-3 tbsp tamarind chutney
2-3 tbsp green chutney (coriander-mint chutney)
1 small onion, finely chopped
1 tomato, finely chopped
¼ cup sev (crispy gram flour noodles)
Fresh coriander leaves chopped 2 tbsp
Chaat masala ½ tsp
Red chili powder ½ tsp

METHOD

In a bowl, combine gram flour, rice flour, turmeric, red chili powder, cumin seeds, and salt, add grated potato, onion, and green chili, mix well, add water gradually to form a thick batter. Heat oil in a deep-frying pan,drop spoonful of batter into hot oil and fry until golden brown and crispy, and drain on paper towels. In a serving plate or bowl, arrange the fried pakoras, layer boiled chickpeas and cubed potatoes over the pakoras, drizzle whisked yogurt over the pakoras and toppings, add tamarind chutni and green chutni as desired, sprinkle chopped onions, tomatoes, sev, fresh coriander, chaat masala, and a pinch of red chili powder and serve immediately.

CHILI CHEESE SHAMI CUTLETS

Ingredients for Shami Mixture

500 gms chicken or beef.
½ cup boiled chana dal
1 medium onion (roughly chopped)
2–3 green chilies
1 tbsp ginger-garlic paste
1 tsp red chili powder
1 tsp coriander powder
½ tsp cumin powder
½ tsp garam masala
1 tsp salt (adjust to taste)
1 egg (for binding)
Fresh coriander & mint (chopped)
Oil for frying

Ingredients For Filling

1 cup mozzarella or cheddar cheese (cubed or grated)
1–2 tbsp chopped green chilies
1 tbsp chopped capsicum (optional)
Black pepper to taste
Ingredients for Coating

1 egg beaten
Breadcrumbs or crushed cornflakes

METHOD FOR FILLING

Mix cheese, green chilies, capsicum, and black pepper.

METHOD FOR CUTLETS

Blend mince, chana dal, onion, green chilies, gingergarlic paste, and all spices to asmooth paste.Transfer to a bowl, add egg, coriander, and mint,mix well.Take a portion of shami mixture, flatten it on your palm. Place some cheese filling in the center. Seal carefully and shape into round or oval cutlets. Dip cutlets in beaten egg, then coat with breadcrumbs. Shallow-fry on medium heat until golden brown and crisp on all sides.
