BELL PEPPER MEATBALL SUBS🫑🍝 Swapped the bread for bell peppers to make this low carb sandwich- cheesy, easy, and satisfying!

INGREDIENTS:
-3 bell peppers
-1 lb lean ground beef
-15 oz jar Rao’s marinara sauce
-3 slices mozzarella cheese
-2 tsp minced garlic
-1/4 cup chopped parsley
-1/4 cup almond flour
-1/4 cup grated parmesan + more to top
-2 tbsp olive oil
-1/2 tsp red pepper flakes
-1 tsp salt
-1 egg

DIRECTIONS:
1. Preheat oven to 350F.
2. In a large bowl, add beef, almond flour, parsley, parmesan, egg, minced garlic, salt, and red pepper flakes. Mix and roll into meatballs.
3. Add 1 tbsp olive oil to a skillet and heat over medium. Add meatballs and cook until all sides are seared- around 10 mins.
4. Add marinara sauce and toss to combine. Cover skillet with lid and simmer on low to medium heat until meatballs have cooked through- about 10 more mins.
5. Cut bell peppers in half and remove stems and seeds. Place them cut side up on a baking sheet and drizzle with the other tbsp of olive oil.
6. Top 3 halves with a slice of mozzarella. Bake until cheese has melted and bell peppers are just warmed through.
7. Add meatballs and sauce on top of the bell pepper halves with cheese and sprinkle on more parmesan. Place remaining bell pepper halves on top and enjoy!
