Ingredients
1 lb ground beef
1/2 lb chorizo
1 Large white onion, diced
4 Cloves of garlic, minced
1 T Ground cumin
2 T Chili powder
2- 15 oz Cans of fire-roasted tomatoes
1 -15 oz Can of chili beans
1- 4 oz Can of green chilies
1/2 C Water, Holy or tap is fine
Salt and Pepper, to taste
“Mixins”- Amounts are approximated
1 C Fritos corn chips,
1/4 C Diced tomatoes,
3 T Green onions, chopped
1 T Sour cream
Directions
– Place ground beef in a medium-sized pot over medium-high heat and allow to brown. Before the beef has fully browned, add chorizo. Cook it thoroughly.
– Once both meats are fully cooked, add the onion and allow to soften. This should take about 5 minutes.
– Then add the garlic, cumin, and chili powder and allow to cook for about a minute until very fragrant.
– Add the fire-roasted tomatoes, chili beans, green chilies, and water. Cover the pot. Reduce the heat to low and allow to simmer for about an hour.
– Assemble the dish. Starting with a large base of Fritos, followed by the chili. Then top with cheese, diced tomatoes, green onions, and sour cream
