I wanted to make chicken mole and poblano cheese enmoladas, but my mother is not the most adventurous eater, and has never had mole before.
Never one to make a plate not everyone could enjoy, I thought of anything that could go with what I wanted to make the mole with, that would be more familiar to her palette, and settled on a sour cream sauce, since she always loved sour cream enchiladas back in Texas. All I asked was for her to try the mole just to see if she might like it.
The way roles change as your parents get older, I tell you.
