This is one of my go-to meals when I need something cheap, easy, and really good. I’ve been making it for ten years and my family always loves it. It also makes a ton of leftovers, so it’s perfect for meal prep.

Ingredients
• 1 tbsp avocado oil
• 1 medium onion, chopped
• 1 16 oz can hominy, drained
• 1 16 oz can great northern beans, rinsed and drained
• 1 14 oz can low-sodium chicken broth
• 1½ cups shredded chicken (Recipe Below)
• ¼ cup lime juice
• 2 tbsp chopped cilantro
• ¼ tsp cumin
• ¼ tsp black pepper
Optional toppings: cheese, cilantro, salsa, chips
Instructions
1. Heat oil in a large pot over medium heat. Add onion and cook for 3 minutes.
2. Stir in hominy, beans, broth, chicken, lime juice, cilantro, cumin, and pepper.
3. Increase heat, cover, and bring to a boil, stirring occasionally.
4. Top with cheese, salsa, chips, and more cilantro.
Easy Crockpot Shredded Chicken
Ingredients
• 4 chicken breasts
• 1 cup chicken broth
• 1 tsp salt
• 1 tsp pepper
• 1 tsp garlic powder
• 1 tsp onion powder
Instructions
1. Place the chicken breasts in the bottom of a crockpot.
2. Pour the chicken broth and seasonings over the top.
3. Cook on low for 6–8 hours or high for 3–4 hours.
4. Shred with two forks and store in the fridge for the week or use in your favorite recipes.
