If you love lasagna but don’t love all the layering and baking, this Chilli Oil Stove Top Lasagna is about to become your new favourite dinner. It’s my cozy comfort food with a little kick!

Ingredients :
Olive Oil – 2 Tbsps
Onion – 1/2 no
Carrot – 1 no
Coconut Milk – 1/2cup
Water-1/2cup
Salt & Pepper – to Taste
Tomato Purée – 200gm
Garlic – 2 Cloves
Chilli flakes – 1/2 Tsp
Oregano – 1/2 Tsp
Grated Mozzarella Cheese 1Cup
Lasagna Sheets – 8 to 10 nos
Chilli oil and green onion to garnish
Process:
•In heated pan add olive oil and chopped onions.
•Saute it for a minute and add the chopped garlic. Add a spoonful of chili oil along with chili flakes and oregano.
•Let it cook then add in the diced carrot. Cook it for about 2-3mins.
•Add the tomato puree and cook well. Add half cup water and coconut milk.
•Adjust the seasoning by adding salt and pepper.
•Break the lasagna sheets into half and place in the sauce.
•Cook for about 8-10mins until the sheets are cooked.
•Top it up with cheese. Let it steam until it melts. Garnish with chopped green onions and chili oil.
