Ingredients
– 250g thick noodles
– 30g peanut butter
– 2g chilli flakes
– 30g green onion, sliced
– 5g sesame seeds
– 15g garlic, minced (about 5 cloves)
– 15g white sugar
– 45g chilli crisp (15g for sauce, 30g for garnish)
– 15g rice vinegar
– 30g dark soy sauce
– Fried shallots
Method
1. Boil salted water, cook noodles about 30 seconds short of done. Save some of the noodle water, then drain and rinse the noodles under cold water so they don’t clump.
2. In a cold pan, add the peanut butter, chilli flakes, green onion, sesame seeds, garlic, sugar, 15g chilli crisp, rice vinegar and dark soy.
3. Put the pan on a burner over medium heat. Stir together until combined and cook until the garlic is fragrant.
4. Toss in the noodles and coat in the sauce. Over medium low heat, splash in a few tablespoons of the noodle water and mix through.
5. Top with more green onion, extra chilli crisp and serve with fried shallots.
