Creamy Roasted Red Pepper Shell Pasta

Ingredients:
• 1 cup shell pasta
• 1 tbsp oil
• 1 small onion, chopped
• 3–4 garlic cloves, chopped
• 1 red capsicum, chopped
• 8–10 cherry tomatoes
• Salt & black pepper to taste
• ¼ cup mozzarella cheese
• 1 cheese cube
• 2 tbsp fresh cream
• Italian seasoning

Method:
1. Boil the shell pasta in salted water until al dente. Drain and keep aside.
2. Heat oil in a pan. Add chopped onion and garlic. Sauté until translucent.
3. Add red capsicum, cherry tomatoes, salt, and pepper. Roast on medium flame for about 8 minutes until soft and slightly charred.
4. Let the mixture cool slightly. Transfer to a blender and add mozzarella cheese, one cheese cube, and fresh cream. Blend into a smooth, creamy paste.
5. Add the sauce back to the pan, mix in the boiled pasta, and cook for 3–5 minutes until everything is well combined and heated through.
6. Sprinkle Italian seasoning and serve warm.

Optional: Add a splash of reserved pasta water for a silkier texture and extra coating

  3. Your pasta making process is somewhat casual but if you want to try authentic Italian pasta, then please follow the below description

    Pasta all’Arrabbiata comes from the Lazio region of Italy, especially around Rome.
    “Arrabbiata” means “angry” in Italian — because of its spicy kick from red chilies 🌶️.

    Traditional Ingredients
    250 g Penne
    3 tbsp Extra virgin olive oil
    3–4 cloves Garlic (thinly sliced)
    1–2 tsp Red chili flakes (or 2 dried red chilies)
    400 g cherry tomato or canned whole, hand-crushed)
    Salt (to taste)
    Fresh Parsley
    Pecorino Romano cheese or (amul, mozzarella)

    Authentic Cooking Method

    Boil Pasta
    Bring salted water to a rolling boil.
    Cook penne until al dente (firm to bite).
    Reserve ½ cup pasta water before draining.

    For sauce

    Heat olive oil in a pan (medium heat).
    Add sliced garlic and sauté gently (do not brown).
    Add red chili flakes and cook for 10–15 seconds.
    Add crushed tomatoes and salt.
    Simmer for 12–15 minutes until slightly thickened.
    Combine
    Add drained pasta into the sauce.
    Toss well.
    Add a splash of reserved pasta water if needed.
    Cook together for 1–2 minutes.
    Finish
    Garnish with chopped parsley.

    Sprinkle Pecorino Romano (optional but traditional).
