🛒 Ingredients

• Idli – cut into cubes

• 1 Capsicum – chopped

• 1 Onion – chopped (layers separated)

• 1–2 tbsp Soya sauce

• 1–2 tbsp Chilli sauce

• 1–2 tbsp Tomato sauce

• Salt – to taste

• 1 tbsp Cornflour slurry (cornflour mixed with little water)

• ½ tsp Chilli flakes

• 1 tsp Ginger – finely chopped

• 1 tsp Garlic – finely chopped

• Fresh coriander – for garnish

• Oil – as needed

👩‍🍳 Method 

1. Heat oil in a pan and shallow fry the cut idli pieces until golden and slightly crispy. Remove and keep aside.

2. In the same pan, add a little more oil if needed. Add chopped ginger and garlic. Sauté for a few seconds until fragrant.

3. Add onion and capsicum. Stir-fry on high flame for 1–2 minutes. Do not overcook; keep the vegetables slightly crunchy.

4. Add soya sauce, chilli sauce, and tomato sauce. Mix well to coat the vegetables evenly.

5. Add salt and chilli flakes. Pour in the cornflour slurry along with a little water as needed. Cook until the sauce thickens slightly.

6. Add the fried idli pieces and gently toss to coat them well in the sauce.

7. Cook for 4–5 minutes on medium flame so the idlis absorb the flavours.

8. Garnish with fresh coriander and serve hot.
