JUICY SHEET PAN MIDDLE EASTERN BEEF KEBABS, seasoned just like my dad used to make when I was growing up! These kebabs are so juicy and flavorful, you will be obsessed! You can serve however you like—in lavash, pita, over rice, etc. I’m sharing my favorite way below—wrapped in warm lavash. And trust me, you MUST MAKE THESE!!! You’ll probably never make kebab another way again! šŸ˜ ⁣

Makes 6-8 servings⁣
2 lbs ground beef (I like 85/15 for juicer kebabs, but leaner works too!)⁣
1/2 white onion⁣
1 red bell pepper⁣
4 cloves garlic⁣
1/4 cup parsley, chopped⁣
2 tb tomato paste⁣
2 tsp cumin⁣
2 tsp paprika⁣
2 tsp aleppo pepper (optional but recommend)⁣
1 tsp ground black pepper ⁣
1 1/2 tsp kosher salt⁣
⁣
Salad⁣
2 persian cucumbers, chopped⁣
1/2 red onion, sliced⁣
2 roma tomatoes, chopped⁣
2 tb sumac⁣
2 tb red wine vinegar⁣
2 tb avocado oil⁣
1 tsp kosher salt⁣
⁣
Yogurt sauce⁣
1 cup greek yogurt⁣
1 Persian cucumber, grated, liquid pressed out⁣
1/2 lemon⁣
1/2 tsp kosher salt⁣
⁣

Preheat oven to 375F. First, make the kebabs. In a small food processor, blend the onion, bell pepper and garlic. It will be liquidy. Transfer to a bowl and use a paper towel to remove as much moisture as possible. Next, add the beef to a large bowl along with the onion/bell pepper/garlic mixture, parsley, and seasonings. Mix very well until incorporated—I like to use my hands. Spread the beef mixture evenly in a flat layer on a greased quarter sheet pan. Make cuts horizontally and vertically just like kebabs you see at a restaurant! Bake for 20 minutes, then broil for an additional 4-5 minutes until golden on top. Remove from oven, cut beef along the horizontal lines you previously cut, to separate the kebabs. To make the salad, chop the veggies and toss with the vinegar, avocado oil, sumac and salt. Make the yogurt sauce and serve as desired. On a lavash, spread yogurt mixture, add the 2-3 kebabs, and the salad and fold up. Enjoy!

  2. Middle Eastern Beef Kebab (Pan-Baked / Sliced Style)

    Ingredients
    • 1 lb ground beef (80–85% lean)
    • 1 small onion, very finely grated or minced
    • 3–4 cloves garlic, minced
    • ¼ cup fresh parsley, finely chopped
    • 1 tsp salt
    • ½ tsp black pepper
    • 1 tsp ground cumin
    • 1 tsp ground coriander
    • 1 tsp paprika
    • ½ tsp allspice (optional but traditional)
    • ½ tsp cinnamon (optional)
    • 2 tbsp olive oil
    • Optional: 1–2 tbsp breadcrumbs if you want it firmer

    Instructions
    1. Preheat oven
    • 400°F (200°C).
    2. Mix the kebab
    • In a large bowl combine:
    • ground beef
    • grated onion (squeeze excess liquid out)
    • garlic
    • parsley
    • all spices and salt
    • olive oil
    Mix very well with your hands for about 2–3 minutes until slightly sticky.
    3. Spread in pan
    • Lightly oil a sheet pan or baking dish.
    • Press the meat mixture evenly about ½–¾ inch thick.
    4. Score before baking
    • Use a knife to cut lines across the meat to form long kebab strips or squares.
    5. Bake
    • Bake for 18–25 minutes until cooked through.
    • Optional: Broil for 2–3 minutes for browning.
    6. Slice and serve
    • Cut along the scored lines to form kebab pieces.
