🫑 CREAMY ROASTED RED BELL PEPPER DIP
Ingredients
• 2 medium red bell peppers
• 1 litre toned milk
• Juice of 1 lemon (to curdle milk)
• 1–2 tbsp lemon soda mixture (baking soda + lemon + water)
• 2–3 garlic cloves
• 1–2 tbsp olive oil
• Salt to taste
• Chilli flakes to taste
• Oregano to taste
Method
1. Heat the toned milk and add lemon juice to curdle it.
2. Strain the milk solids and rinse well with clean water to remove the lemon taste.
3. Roast the red bell peppers until charred, then peel the skin.
4. Add the milk solids, roasted peppers, garlic, olive oil, and lemon soda mixture to a blender.
5. Blend until smooth and creamy.
6. Add salt, chilli flakes, and oregano. Blend again.
7. Refrigerate for a few hours to help it thicken.
8. Use as a dip or a spread.
