Pueblo Green Chili Smothered Steak & Chicken Enchiladas

Tender fajita steak and chicken, melted Monterey Jack, and everything absolutely drenched in that legendary Pueblo green chili.

Steak & Chicken Filling:
• Fajita Chicken
• Fajita steak
• Monterey Jack cheese

Assembly:
• Tortillas
• Steak & chicken
• Monterey Jack cheese

Smother with Pueblo Green Chili

Pueblo Green Chili:
• 1 onion
• 1/2 diced pork loin
• 2 tablespoons garlic
• 1/2 stick butter
• 1/4 cup flour
• 1 box chicken stock
• salt and pepper to taste
• 1/2 tablespoon Cumin
• 32 oz roasted chopped Pueblo green chilies

Garnish:
• Fresh cilantro
• Chopped red onion
• Crema

Rich, smoky, cheesy, and completely smothered — exactly how Pueblo likes it.
