Start by frying 1 large chopped onion in 2–3 tablespoons avocado oil until fragrant. Add 3 pounds ground turkey and cook until browned. Season with coriander, chili powder, cayenne pepper, and sumac and cook about 5 minutes. Pour in ½ cup red wine and cook briefly to reduce.
Add oregano, minced garlic cloves, salt, and black pepper, cooking 2–3 minutes. Stir in 2 and half can tomato sauce and cook another 5 minutes.
Transfer everything to a slow cooker, add bay leaves, and cook on LOW for 8 hours.
Serve hot and top with grated cheddar cheese or your favorite hard cheese. This chili is flavorful, comforting, and even better the next day!
