“Over the Top” Chili 🌶️
This is the way to make your normal recipe go from good to award winning. 🏅 🙌🏼
Meat 🐮
1.5 lb ground chuck
1 lb ground beef 80/20
1/2 lb breakfast sausage
Season the meat heavily w chili powder, Heath Riles Beef Rub and Garlic jalapeño. Mix together and make a tight loaf. Season the outside again and insert your meat probe before smoking.
Chili Base 🍅
1/2 package of bacon chopped
Yellow onion diced
1/2 red onion diced
2 green bell peppers diced
Lots of garlic
1 can of tomato paste
28oz can of petite diced tomatoes
28oz can of crushed tomato’s
1 can of rotel
1 box of beef broth (4 cups)
1 tbsp each Better than Bouillon Chilli and Chicken 🔥
Add seasonings from meat including cumin and brown sugar – measure w your heart
Place your meat on a wire rack or top shelf of your grill making sure your pot is directly underneath.
I smoked at 275 degrees until the meat hit 160 internal.
Break up the meat and add to the chili base and smoke for an additional hour. Stir every 15 mins.
