Chili and Cinnamon Rolls
Ingredients:
For the Dough:
¼ cup milk, warmed to 105-110 F
1 ¼ tsp instant yeast
2 tbsp + 1 tsp granulated sugar
1 cup bread flour (I used gluten-free)
Pinch of salt
2 egg yolks
1 tbsp unsalted butter, melted
1 tsp vanilla extract
For the Cinnamon Butter:
2 tbsp unsalted butter, softened
¼ cup brown sugar
½ tsp ground cinnamon
For the Chili:
½ tbsp avocado oil
¼ lb ground chicken
¼ medium yellow onion, diced
7 oz canned whole tomatoes
¼ tsp cayenne pepper powder
¼ tsp garlic powder
⅛ tsp ground cumin
¼ tsp salt, or to taste
¼ tsp black pepper, or to taste
Directions:
For the Dough: In a bowl, warm the milk to at most 110 F, then add in the yeast and 1 tsp sugar
Mix and set aside until foamy, around 10 minutes
In a large bowl, sift in the flour, rest of the sugar (¼ cup), and salt, then mix and make a well in the center
Add in the egg yolks, butter, foamy yeast mixture, and vanilla extract, then mix with a spatula or stand mixer until a soft dough forms
Cover the dough with a damp towel and let rise in a warm place for 1-2 hours
Preheat the oven to 350 F
Once risen, roll the dough flat into a ½-inch thick rectangle
For the Cinnamon Butter: Soften the butter, then mix with the brown sugar and cinnamon
Spread the cinnamon butter over the dough, then cut into 4 long strips and roll each strip up
Place the rolls into a baking dish and bake for 30-40 minutes, until golden brown and puffed
For the Chili: In a nonstick pan, heat the oil and cook the onion and chicken until the chicken is no longer pink, then add in the tomatoes, cayenne, garlic powder, cumin, salt, and black pepper
Let simmer until thickened to your liking, then remove from the heat
Serve the chili with the cinnamon rolls

As a native Kansan I must say, I have never seen chili on a cinnamon roll. But my family has some Texan influence on how we do chili. Hopefully some other Kansans can help me out.
As I've had it we don't put the chili on top of the cinnamon roll, we just eat it with it sort of as a side. Many schools here still serve this as well, it's the best lunch at my school TT.

Serving somebody this in prison qualifies as a cruel and unusual punishment and therefore violates the US constitution. This is a clear no for me. Have them be separate dishes, entirely and they are both fine, but together, this is torture

chili is made best with both brown sugar and molasses, and a bit of cinnamon. just made a big batch of my famous chili but never tried chili and cinnamon rolls… might have to give that one a go lol
