One of my the easiest ways to cook leeks and get that perfect buttery soft texture. They sort of part bake, part steam until they are melt in the mouth tender. I love them with a garlicky hazelnut chilli butter. V good on the side of a roast or as a sharing main. Also very good if you want a jazzed up veggie starter, some whipped ricotta or mozzarella in there is good too. Full recipe in my new book, Cooking Made Simple
