
Hello,
Of all the Mexican restaurants near me, this is the only one that offers a side dish they call Chile Relleno Regular.
I'm trying to find a recipe to make it at home, but I can't find it.
Is not like the typical stuffed, fried pepper. This one is like a base layer of meat, topped with refried beans(?) that has a rough chopped bell pepper in it. Then it's covered with a good portion of white cheese. It's maybe baked to let the cheese melt?
Any clue what else it may be called so I can locate a recipe? The spices & flavor are phenomenal.
I've included the menu description; sorry I didn't include a pic of the dish. Visually, it basically looks like a small plate of refried beans with lots of melted cheese on top of it.

Es un chile relleno normal, sólo que la carne la preparas con el queso, así se derrite y se combina, y a la hora de servir lo metes todo dentro del chile.
I posted a stuffed bell pepper ans the post was taken down because it wasn’t “Mexican food”. It is Mexican food just not popular. This looks like stuff bell pepper.
