CRUNCHY RAGI AUR HARE MATAR KA TOSTADA 🌮

Ingredients-
The Green Pea & Paneer Base:
* 2 cups fresh green peas (blanched)
* 150g paneer (crumbled)
* 1 lime (juiced)
* 3 green chillies
* 1 small piece ginger
* Fresh coriander (small bunch)
* Handful of mint leaves
* Salt to taste
The Zesty Corn Salad:
* ½ cup boiled sweetcorn
* 2 medium tomatoes (finely chopped)
* 2 medium cucumbers (finely chopped)
* 1 medium onion (finely chopped)
* Lime juice
* Chilli flakes (to taste)
* Salt to taste
The Base & Topping:
* Ragi Rotis (or any leftover roti/paratha)
* Grated cheese for garnish

Recipe

To make matar mixture-
– Blanch 2 cups of fresh green peas in boiling salted water for 5 minutes.
– Drain and let it cool down.
– Then add the green peas into a chopper along with that add one lime juice, 3 green chillies, a small piece of ginger, a small bunch of fresh coriander, mint leaves and salt. And chop coarsely.
– Add 150 gm paneer and mix it, keep aside.

To make salad-
– In a mixing bowl, mix half a cup boiled sweetcorn, 2 medium size tomatoes finely chopped, 2 medium size cucumber finely chopped, 1 medium size onion finely chopped, lime juice, chili flakes as per your taste and salt.
– Mix well and keep it aside.

To make ragi tostada –
– We will take Ragi Roti (you may take any roti or paratha).
– On a tawa make the roti crispy as shown in the video. (It should be like khakhra).

To serve-
– Spread matar mixture on crispy ragi roti.
– Top it up with salad and some cheese.
