Ingredients:
2 Tbsp Olive oil
1 Medium yellow onion -diced
Half a Green Bell Pepper
Half Red Bell Pepper
1 Jalapeño
2 Medium Carrots
2 Ribs Celery
1/2 Tsp Salt
1/2 Tsp Pepper
1 Tsp Minced Garlic
2 Tbsp Chili Powder
2 Tsp Ground Cumin
1 1/2 Tsp Smoked Paprika
1 Tsp Dried Oregano
1/4 Tsp Creole
1/4 Tsp Cayenne Pepper
1/4 Tsp Onion Powder
1/4 Tsp Garlic Powder
1 Can (28 ounces) Diced Tomatoes with their juices
1 Cans (15 ounces each) Black Beans, rinsed and drained
1 Can (15 ounces) Pinto Beans, rinsed and drained
2 cups vegetable broth or water
1 Bay Leaf
2 Tsp Cilantro
1 to 2 Tsp Sherry Vinegar or red wine vinegar or lime juice, to taste

Sour Cream:
1 Cup Raw Cashews
1/4 Cup + 2 Tbsp Lemon Juice
1/4 Tsp Salt
1 Tsp Nutritional Yeast
1/2 Cup Water
