Green chutney looks simple, but most people get it wrong — either too bitter, too watery, or lacking balance.

In this video, I show how to make a smooth, fresh and perfectly balanced coriander yogurt chutney using simple ingredients, with proper control of texture, salt, and acidity.
The key is how you grind and when you add lemon.

Ingredients
• 1 bunch fresh coriander (with tender stems)
• 3-4 big garlic cloves
• 1–2 green chilies
• 1 dried red chili
• ½ tsp roasted cumin powder
• ½ tsp salt
• ¼-½ tsp black salt
• 3 tbsp thick curd (yogurt)
• 1–2 tsp lemon juice
Optional:
• pinch of sugar (only if needed to balance)

👨‍🍳 Method
1️⃣ Wash coriander thoroughly and remove excess water.
(Too much water makes chutney thin.)
2️⃣ In a blender, first grind:
• garlic
• green chili
• dried red chili
• cumin powder
• salt + black salt
Grind into a coarse base.

3️⃣ Add coriander and blend again until smooth.
4️⃣ Add curd and blend briefly to combine.
5️⃣ Transfer to a bowl, then add lemon juice and mix.
6️⃣ Taste and adjust salt or acidity.

🔑 Key Tips
• Grind spices first for better flavor extraction
• Do not add too much water
• Add lemon at the end to keep chutney fresh and green
• Use thick curd for better texture

🧠 Flavor Balance
A good green chutney should be:
• fresh (coriander)
• slightly tangy (lemon + curd)
• mildly spicy (chili)
• rounded (cumin + garlic)
