🌶️Easy Slimming World beef chilli & rice recipe – Healthy, high protein meal idea 😋



Looking for an easy healthy dinner recipe for weight loss? This Slimming World friendly beef chilli is packed with flavour, high in protein and made with lean beef mince and simple store cupboard ingredients. It’s a great meal idea, perfect if you’re following Slimming World and trying to lose weight but still want a filling meal.

🛒 Ingredients

500g lean beef mince (5% fat or less)
1 cal cooking spray
1 red onion, finely diced 🧅
2 red peppers, deseeded and finely diced 🫑
3 garlic cloves, crushed 🧄
2 tsp ground cumin
½–1 tsp chipotle chilli flakes or hot smoked paprika 🌶️ (to taste)
1 x 400g can black beans, drained and rinsed
2 x 400g cans chopped tomatoes 🍅
125g dried long-grain or basmati rice 🍚
Fat-free natural Greek yogurt, to serve
Fresh coriander, to serve 🌿

👩‍🍳Method

Heat a large non-stick frying pan over high heat and dry fry the lean beef mince for 1–2 minutes until browned, breaking it up with a spoon. Drain and wipe the pan clean.
Spray the pan with low-calorie cooking spray and cook the onion and peppers over medium heat for 5–6 minutes until softened.
Add the garlic, cumin and chilli flakes (or smoked paprika) with a splash of water and cook for 1–2 minutes.
Return the mince to the pan and add the black beans, chopped tomatoes and one can of water. Season, bring to a simmer and cook for 15–20 minutes until thickened.
Cook the rice according to the packet instructions.
Serve the chilli with rice, a spoon of fat-free Greek yogurt and fresh coriander.
