Buddy's Cajun Chili Mix

Buddy’s Cajun Chili is the Best on the Market and has been sin I introduced it back in 2010. It just doesn’t taste like that “out of the can or out of the box” chili. Since I’ve been cooking this chili so long, I’ve cooked it 1000 different ways. Just because I have a specific way that I tell folks to cook it doesn’t mean that I’ll follow my own advice. For instance, if I have Bloody Mary Mix in the fridge I’ll use it instead of tomato sauce. Instead of the water called for on the bag I’ll use broth, red wine, or even beer. To Bean or Not To Bean? I’ve gotten crazy here to. I’m fond of Black Beans and I cook with them a lot. However, I’ve also done a 3 Bean Chili. While you’re in my website, check out the recipe for White Bean Chili!! I’ve got to mention here too about my Frito Pie……well that’s not what we call it down here. We call it Chili Fritos and I like em dressed. That just means I put chili on the Fritos then add anything you might put on a burger. My favorite additions are mayo, mustard, pickles, jalapenos, tomatoes, onions, and lettuce. OMG!!! I’m drooling on my keyboard!!
And look folks, just because it’s in a bag packaged for 1 pot of chili, don’t think you HAVE to cook a pot of chili. You can use the mix to make Chicken or Beef Enchiladas, Taco Soup, Enchilada Soup, Enchiladas Verde, or the White Bean Chili mentioned above. Just season it to your taste and save the rest.
While Baking is a science, in my opinion Cooking is not. Just have fun in the kitchen and try different things. I call this weight I’m sporting these days Research and Development!! Have fun Cooking and do whatever blows your skirt up!!
