  2. A jalapeño is ripe when the green color starts to darken and the skin gets light cracking. No need to let it get red.

    I would pick the one with the horizontal crack. It’s more than just corking. Where I live, those cracks turn gross and moldy. I store peppers in my fridge. If they’re partially red, then they will continue to redden. However, I would recommend using the cracked ones sooner rather than later or else you’ll open your fridge to a moldering pile of ooze.
