    Ingredients
    * Eggs: 4 (hard-boiled)
    * Oil: ¼ cup (adjust as per preference)
    * Garlic: 12-15 cloves
    * Ginger: 1 small piece
    * Green Chillies: 4 + 1 for garnish
    * Fresh Coriander: 1 large bunch (with stems)
    * Onion: ½ cup (roughly chopped)
    * Tomato: 1 (finely chopped)
    * Spices: * Coriander powder: 1 tbsp
    * Chat masala: 1 tbsp (optional)
    * Black pepper powder: ½ tsp
    * Garam masala: ¼ tsp
    * Salt to taste
    * Herb: 1 tbsp Kasuri Methi
    * Water: ¼ cup (warm water)
    * Optional: Processed cheese for extra flavor

    1. Prepare the Green Chili Paste
    * In a mixer jar, combine the garlic cloves, ginger, 4 green chillies, a large handful of fresh coriander leaves (including stems), and the chopped onion.
    * Pulse the mixture until it forms a smooth paste. The weight of the onions helps in blending everything perfectly.
    2. Sauté the Base
    * Heat a flat pan (tawa) with oil. Once the oil is hot, add the prepared green chili paste.
    * Toast the paste on a high flame for 4-5 minutes. Scrape the bottom of the pan as it sticks to ensure all the flavors are incorporated.
    * Add the finely chopped tomato and sauté for another 2-3 minutes. Season with salt and continue to fry until the oil starts to separate. If the mixture sticks too much, add a small splash of water (about ¼ cup) and continue cooking until the oil floats on top.
    3. Incorporate the Spices
    * Add the coriander powder, chat masala (if using), black pepper powder, and garam masala.
    * Mix well and sauté until the spices are fragrant and well-cooked.
    4. Add the Eggs
    * Take the boiled eggs and grate them into the pan using the side of the grater with larger holes.
    * Pour in a little warm water and toast the mixture on a high flame. In traditional styles, more oil is used at this stage for a richer flavor, but using warm water helps keep the dish moist and flavorful without excessive oil.
    5. Final Touches
    * Add freshly chopped coriander, one finely chopped green chili, and the kasuri methi.
    * Toast everything together one last time to blend all the aromas.
