Paneer Butter Masala is often made heavy with cream and sugar — but a proper version is about balance, not excess.
In this video, I show how to make a smooth, velvety and perfectly balanced Paneer Butter Masala without relying on cream or sugar.

This method gives you a rich but clean-tasting curry with soft paneer and a glossy finish.

🧾 Ingredients (2–3 servings)
Paneer
• 250 g paneer (medium cubes)
Base
• 4 medium tomatoes
• 1 medium onion
• 4 garlic cloves
• 1 inch ginger
• 1 green chili

Whole Spices
• 4 green cardamom
• 4 cloves
• 7–8 black peppercorns
• 2 dried red chili
• 1 bay leaf

Fat
• 2 tbsp butter
• 1 tbsp oil

Powder Spices
• 1½ tsp Kashmiri chili powder
• ½ tsp turmeric
• 1 tsp coriander powder

Balance & Aroma
• 1 tsp kasuri methi
• salt to taste

Signature
• ½ red bell pepper (roasted)

👨‍🍳 Method
1️⃣ Cook tomatoes, onion, garlic, ginger, chili and whole spices with water until soft.
2️⃣ Add roasted half red bell pepper and blend into a smooth puree.
3️⃣ (Optional) Strain for a silky texture.
4️⃣ Heat butter + oil and bloom powdered spices briefly.
5️⃣ Add puree and cook until the gravy reduces and fat separates at the surface.
6️⃣ Add salt and crushed kasuri methi.
7️⃣ Add paneer and simmer for 2–3 minutes only.
8️⃣ Adjust consistency and finish.

🔑 Key Tips
• Do not overcook paneer — it becomes rubbery
• Cook gravy until fat separates — not just by time
• Roast bell pepper for natural sweetness
• Do not overcook spices in fat
• Keep texture smooth and controlled

Gas say Benzene naam ka dangerous chemical nikalta hai jis-say cancer hota hai. Chahey toh aap Google karlo. Aap pan mein shimla mirch ko halkay say oil mein sautee karo toh woh safe hai. Directly gas par roast karna dangerous hai. Baki plastic kay chimtay say garam khanay wali cheez mat pakdein. Plastic ka chimta dangerous microplastics chhodta hai hamaray khanay mein. Same wajah hai key garam khanay wali cheeez ko platic blender mein nahi peesna chahye aur plastic key kadchhi say garam khana nahi hilana chahiye. Apni sehat ka dhyaan rakhiye.
