🍗 Mughlai Kaju Butter Chicken Recipe

🔹 Marination:

In a bowl, add:

1 tsp ginger-garlic paste

1 tsp salt

2 tsp Kashmiri red chili powder

2 tsp curd (yogurt)

1 tsp kasuri methi

1 tsp garam masala

2 tsp cream

1 tsp ghee or butter

1 tsp Schezwan sauce

1 tsp chili sauce

Mix everything well and coat the chicken properly. Let it rest for 15 minutes.

🔹 Cooking the Chicken:

Heat 1 tbsp oil in a pan and shallow fry the marinated chicken for about 15 minutes until golden and cooked.

For a smoky grilled effect, place the chicken pieces on a flame grill or mesh and lightly char them for 2–3 minutes.

🔹 Gravy Preparation:

In a pan, add:

3 chopped onions

3 tomatoes

8 dried red chilies

10 makhana (fox nuts)

10 cashews

Shallow fry for 5 minutes, then let it cool.

Transfer to a blender, add:

2 tbsp curd

1 tsp ginger-garlic paste

Grind into a smooth paste.

🔹 Making the Gravy:

Heat 1 tbsp butter and 2 tbsp oil in a pan. Add the prepared puree.

Now add:

½ tsp turmeric powder

½ tsp coriander powder

½ tsp garam masala

Some kasuri methi

1 tsp salt

1 tsp Kashmiri red chili powder

Cook for 15 minutes until the oil separates.

Add the roasted chicken into the gravy and mix well.
