Homemade Chili-Garlic Sauce (Better Than Store-Bought!)

Skip the store-bought jars and make your own Chili-Garlic Sauce at home! This homemade version has a bigger, bolder flavor, is super easy to customize, and skips all the preservatives found in the commercial stuff. Whether you want a mild kick or scorpion-pepper heat, this versatile condiment is a must-have for your kitchen.

In This Video, You’ll Learn:

The Best Peppers to Use: I’m using Fresno chilis for a jalapeno-level heat, but I’ll show you how to swap them for anything from Serranos to Scorpion peppers.

Flavor Balancing: How to use garlic, white wine vinegar, and a touch of sugar to create the perfect base.

Texture Mastery: Tips for adjusting the consistency—keep it thick like a chili paste for cooking or add liquid for a pourable sauce.

The Simmer Secret: Why a 10-minute simmer is essential for “blooming” the flavors and melding the ingredients.

Secret Add-ins: Why I sometimes add fish sauce for extra umami and how to use thickeners like xanthan gum for that classic store-bought sheen.

How to Use Your Chili-Garlic Sauce:
This sauce is incredibly versatile! Beyond classic Asian cuisine like ramen and stir-fries, try using it as:

A spicy rub for grilled meats.
A flavor booster for other sauces and condiments.
A base for homemade dressings or marinades.

Ingredients You’ll Need:
4 oz Chili Peppers (Fresnos, Jalapenos, or your choice)
4+ cloves of Garlic (I usually double it!)
2 tbsp White Wine Vinegar
1 tsp Sugar (or honey/brown sugar)
Salt and Pepper to taste
Water (to reach your desired consistency)

  1. Low on my store bought Chinese Chili Garlic Sauce too so I'll give this recipe a try in my new 64 oz. Ninja Blender. Since I mostly use it in Chinese stir-fry sauces I'm gonna add some Fish Sauce. Keep 'em coming!

  2. Yum, what a perfect condiment!! I may add a dash of maple syrup as my sweetener. Not because of health/nutrition, just because I love it lol. Thanks Chef! šŸ”„ā¤

  3. Thank you! Your sauces are all amazing, I just finished up your taco sauce the other day and your creamy jalapeno is ridiculously good! I would like to spice up my shrimp cocktail sauce with some of this.

  4. My favorite use is on pizza! I've been using the Huy Fong stuff for years, but will definitely try my own version with hotter peppers!

  5. You make it look easy, and I am encouraged I could do this myself. Great episode and great recipe!!!

  6. Hmmmm! I’m thinking I’ll try that this year with fermented Fresno, ghost & garlic šŸ‘

  7. Sometimes I'll put trisquit crackers on my toaster oven tray, put a little chili garlic sauce on them, then a 1/4 slice of a good cheddar cheese on top of each cracker. Broil for a few minutes. Voila! Dinner.
