Eggs & Potatoes Pancake
Ingredients:
– 500g (1.1lb) of potatoes;
– Green onion;
– Dill;
– 3 eggs;
– 1 tsp red paprika;
– ½ tsp black pepper;
– ½ tsp salt;
2 tbsp of rice flour;
– 100g Mozzarella cheese.
Step-by-step recipe:
– Dice some onion;
– Grate 500g of potatoes;
– Pour cold water over potatoes;
– Chop some dill;
– Break 3 eggs, add onion and dill;
– Add 1 tsp of red paprika and ½ teaspoon of black pepper;
– Drain water from potatoes;
– Add ½ tsp of salt and 2 tbsp of rice flour, mix;
– Put 50% potatoes in a frying pan, greased with oil;
– Add 100g Mozzarella cheese;
– Put the remaining 50% potatoes;
– Fry until golden brown for about 8~10 minutes per side.

Pro Tip: don't use a lid, instead finish in the oven. Both sides come out crispy.
