Now let me tell you… if you LOVE chile rellenos but hate dealing with all that frying, this CHILE RELLENO CASSEROLE is about to be your new obsession!!!

I first shared this recipe 3 years ago, and so many of you tried it and LOVED it just as much as I do!

It’s so much easier, way less mess, and you still get all that cheesy, fluffy, roasted chile flavor just like the authentic version. The egg comes out light and fluffy, the cheese is perfectly melty, and every bite hits Honestly… once you make it this way, you might not go back

Ingredients makes 6 servings using a 7×11” baking dish
6-7 poblano, hatch or Anaheim peppers
6 eggs at room temperature
1/2 tsp black pepper
3/4 tsp salt
1/2 tsp baking powder
1/3 cup all purpose flour
1/4 cup heavy cream or milk
20 oz Oaxaca or Monterey Jack cheese; shredded

Salsa
4 Roma tomatoes
1-3 jalapeños or Serranos peppers
1-5 Chile arbor dried chili pods
1/8 onion
2 garlic cloves
1/2 tsp oregano
2 tsp salt
1/2 tsp black pepper
1/4 cup water
1 serving g of love 💕

  1. One tip I have to share: use gloves when peeling the poblanos! I got an insanely hot poblano once and my hands were on fire for HOURS. Some of the worst pain I've ever felt and nothing helped, I just had to wait it out.

  3. Maybe it's just me, but I would remove most of the loose skin on those steamed tomatoes before blending them. And, I would rinse all the seeds off the chilies. Finally, I would put cheese only on top of the chilies (or, in-between the two layers of chilies) and then use the remaining egg batter for the top (after using 1/2 of the batter for the first layer of the bottom. Definately going to try this! Thank you for sharing! It looks so good!

  5. You are my favorite Spanish cooking channel. The chili rellano casserole looks so good. It’s easier and less fattening than frying it.
