Ingredients-
For Dal-
2 cup toor dal (arhar dal)
6 cups water
1 tsp turmeric powder
Salt to taste

For Dhokli (Dough)-
2 cups of wheat flour (atta)
2 tbsp besan (optional)
1 tsp turmeric
1 tsp red chili powder
1 tsp ajwain
Salt
1 tbsp oil
Water to knead

For Tempering-
4 tbsp oil or ghee
2 tsp mustard seeds
2 tsp cumin seeds
A pinch hing
8–10 curry leaves
3-4 dried red chilies
1 tbsp peanuts
1-2 chopped green chillies
1 tbsp chopped ginger garlic
2 medium size chopped tomatoes
1/2 tsp turmeric powder
1 tsp red chili powder
Salt to taste
1 tbsp jaggery
1 tbsp tamarind pulp or lemon juice

For Garnish-
Fresh coriander
Lemon juice

Step 1: Cook the Dal
1. Wash and pressure cook toor dal, turmeric, salt, and water for 4-5 whistles.
2. Mash the dal well and keep aside.

Step 2: Make Dhokli Dough
1. In a bowl add atta, besan, turmeric, red chili powder, ajwain, salt, oil.
2. Add water and knead a medium-soft dough.
3. Rest for 10 minutes.
4. Roll thin like roti, Cook for 10–15 seconds on the tawa.
5. Cut into small diamond or square pieces.

Step 3: Prepare Dal Base
1. Heat ghee or oil in a deep pan.
2. Add mustard seeds, cumin seeds, hing, curry leaves, dried red chilies, peanuts, ginger, garlic and green chilli
3. Add tomatoes, turmeric powder, red chili powder, salt, cook until tomatoes become soft, then pour cooked dal.
4. Add jaggery and tamarind pulp and mix well.
5. Add water if needed to make a slightly thin consistency.

Step 4: Cook Dhokli
1. When the dal starts boiling, add dhokli pieces one by one.
2. Stir gently so they don’t stick together.
3. Cook for 15-20 minutes until dhokli becomes soft.

Step 5: Final Touch
Adjust salt, sweetness, and tanginess.
Garnish with coriander leaves
Serve hot with ghee and lemon juice.

✨ Tip: Dal dhokli becomes thicker as it cools, so keep the dal slightly thin while cooking.
