Ingredients:

3 medium potatoes (peeled and roughly chopped)
1 tablespoon chilli flakes
½ tablespoon oregano
½ tablespoon black pepper powder
Salt to taste
1 tablespoon grated garlic
5 tablespoons corn starch (cornflour)
2 tablespoons fresh coriander (finely chopped)
Oil for deep frying

Method:

Peel and roughly chop the potatoes.
Boil them for 4–5 minutes only (do not overcook).

Transfer the boiled potatoes to a chopper and chop coarsely. Make sure small chunks remain for a good bite texture.

Add chilli flakes, oregano, black pepper powder, salt, grated garlic, corn starch, and fresh coriander.

Mix everything well to form a soft but firm mixture.

Shape the mixture into small bite-sized balls or nuggets.

Heat oil on medium flame and deep fry the potato bites for 5–7 minutes until crispy.

Do not fry until dark golden, as over-frying will make the potatoes shrink and turn hard.

Remove and drain on tissue paper. Serve hot with ketchup or dip of your choice.
