Ingredients & Process
The Base
Ingredients: White Rice, Quinoa (1:1 ratio), Water.
Process: Wash and soak for 20 mins. Pressure cook or pot-boil until fluffy.
Kakarkaya Karam (Bitter Gourd Fry)
Ingredients: Sliced Bitter Gourd, Oil, Salt, Turmeric, peanyts,daniya,Tamarind, Garlic-Red Chili Powder (Karam).
Process: Sauté sliced kakarkaya in oil until golden/crispy. Toss in garlic-chili powder and salt. grind all Ingredients and mix and Fry for 2 more minutes.
Majjiga Charu (Buttermilk Stew)
Ingredients: Sour curd, Water, Green chilies, Ginger, Onions, Curry leaves, Mustard seeds, Cumin, Turmeric.
Process: Whisk curd and water. Add tempering (tadka) of mustard seeds, cumin, chilies, and turmeric. Garnish with fresh onions and coriander.
