This white bean chicken chili has been a family favorite for years. I’m not sure where my neighbor Pam got this recipe from, but she shared it with me, and boy, I’m happy she did.
It has few ingredients, so it’s quick and easy for a weeknight, but I have also put it in the crockpot and had it simmering all day.
The perfect meal for the Fall season!

Ingredients:
1 pound of cooked shredded chicken
1 onion chopped
4 cloves garlic chopped
1 4oz can mild chopped green chilies
1 tsp oregano
1 tsp cumin
1/4 cayenne pepper
2-3 cup chicken stock
8 oz pepper jack or Monterey jack cheese
salt & pepper to taste
olive oil
Over medium heat, add enough oil to coat the bottom of the pot. Sautee the onion and garlic. Add chilies, cooked chicken, spices, chicken stock, and beans.
Let simmer for about 15-20 min. Add cheese.
