This is everything I made for a Turkish dinner party 🇹🇷🧆



I love cooking Turkish food for hosting because so much can be prepped ahead, making it stress free and easy!

🧆 Lamb adana-style köfte
🌶️ Ezme chilli sauce
🥒 Cacık (cucumber and garlic yoghurt dip)
🍆 Yoğurtlu patlıcan salatası (smokey yoghurt aubergine dip)
🥗 Turkish salad
🍚 Pilav (Turkish rice)

🧆 Lamb köfte –

800g lamb mince
Large bunch parsley, finely chopped
3 small onions or 1 large, finely chopped (blitzing makes it easier)
3 cloves garlic, finely chopped
2 tsp cumin
1 tbsp pul biber / Aleppo pepper
Salt & black pepper

Mix well and shape into 3–4cm kofte. Top tip – dip hands in cold water to stop the mixture from sticking. Chill for a few hours (or overnight), then fry in olive oil 3–4 mins each side until golden.

🌶️ Ezme –

2 large tomatoes
Large bunch of parsley
1 red onion
A few mint leaves
1 green chilli pepper
1 Turkish green pepper (Charleston / carliston)
1 tsp pul biber / Aleppo pepper
1 tbsp Turkish red pepper paste (sweet or hot)
1 tbsp pomegranate molasses
4 tbsp olive oil (forgot to show this!!!)
Juice from half a lemon
1 tsp sumac
Salt

Blitz until slightly chunky and chill for at least an hour. Finish with olive oil.

🥒 Cacık –

1/4 cucumber, grated and excess water squeezed out
2 tbsp Greek yoghurt
1 crushed garlic clove
1 tbsp olive oil
1–2 tbsp water (to loosen)
Salt
A small handful fresh dill or 1 tsp dried
A small handful fresh mint or 1 tsp dried

Combine and chill, then drizzle with olive oil to serve.

🍆 Yoğurtlu patlıcan –

1 aubergine
1 garlic clove
2 tbsp Greek yoghurt
1 tbsp olive oil
Salt

Preheat oven to 200°C / 180 fan. Brush aubergine with oil and roast for 30 mins, turning every 10 mins until soft. Cool, peel, then blend with remaining ingredients. Chill, then finish with olive oil.

🥗 Turkish salad –

1 red onion
2 large tomatoes or lots of baby plum tomatoes
1 large bunch of parsley
Salt
1 tbsp pomegranate molasses
1 tbsp olive oil
Juice of a lemon
1 tbsp sumac

Slice onion and tomatoes, add salt and gently squeeze to release juices. Leave briefly, then mix with remaining ingredients and adjust to taste.

🍚 Pilav –

1 tbsp butter
1 cup basmati rice, thoroughly washed
2 cups chicken or veg stock
Small handful of orzo

Melt butter in a wide pan and toast orzo until golden. Add rice, coat, then pour in stock. Level out, bring to the boil, then cover and cook on lowest heat for 11 mins. (Do not stir the rice!)
Once water is absorbed, place a tea towel under the lid and steam for 10 mins. Fluff before serving – I like black pepper and a dollop of yoghurt.

And that’s it – afiyet olsun!

  1. Good job all the dishes looks really delicious, but you're talking really really fast i couldn't catch most of ingredients and i thought I'm having a stroke.

    Notice how they all “come from”southeast turkey aka the Levantine Iraq region turkey stole

    Turks hate Arabs but love our food
    I find this theft insulting

    When we make these dishes (but better) we get accused of stealing Turkish cuisine by Turks & foreigners
    Just because turkey has more publicity & everyone is ignorant
    Especially the uncultured Turks who wanna keep acting dumb

    This theft has to stop

  4. You did sooo well! As a Turkish person, I love our cuisine but I'm just not someone who enjoys cooking very much. Everything you made looks absolutely delicious, and your pronunciation is also spot on! ❤

Uzerinde nar ekşili sos yazan hicbir çakma nar ekşisini almayiniz bunlar doğal nar ekşisi olmayip sentetik uretilen yapay soslardir. Üzerinde direkt NAR EKŞİSİ yazan %100 nardan yapilan soslardan almaniz hem sağlığınıza hem yiyeceklerinize daha iyi gelecektir.

  6. I love that hot chili dip, but I make it slightly different by fire roasting the tomatoes and the chillies which gives it a nice smoky flavor.

  9. This is great! But could you please never again clean a garlic press with the sharp side of your knive. Your knive would be grateful 😉
