Crispy Veg Paneer Sourdough Sandwich 🥪

Ingredients:
– Broccoli florets (microwaved & finely chopped)
– Carrot (grated)
– Onion (finely chopped)
– Frozen corn (microwaved)
– Sourdough bread slices
– Butter (for toasting)

For the sauce:
– Paneer
– Curd (yogurt)
– Lemon juice
– 1 red chilli
– Chilli flakes
– Salt (to taste)
– 2 garlic cloves

Instructions:
1. Microwave broccoli florets until soft, then finely chop.
2. Grate the carrot, finely chop the onion, and microwave the frozen corn.
3. In a mixer, add paneer, curd, lemon juice, red chilli, chilli flakes, salt, and garlic. Grind into a smooth, creamy sauce.
4. In a bowl, mix the chopped veggies with the prepared sauce. Add salt and pepper powder to adjust spice (pepper powder is optional).
5. Take sourdough bread slices and spread a generous amount of the filling.
6. Close the sandwich and toast with butter on both sides.
7. Press with a weight and cook until golden brown and crispy.
8. Cut into halves and pack for lunchbox.
