Pumpkin chili may sound strange, but it taste so good! That is if you like a mild sweeter than spicy chili š¶ we have a butt load of pumpkins picked, and inside already. We also have I donāt know how many pumpkins š still in the garden, that will be ready in no time, so pumpkin everything is what we will be doing. If you want to make pumpkin chili, but have no pumpkins or donāt want to go through the hassle of making the purĆ©e, you can always use canned purĆ©e from the store. I will leave the recipe below, I hope it makes sense to you. I am not a recipe writer, I just like to cook and eat š
Ingredients:
1 pound hamburger
2 peppers of choice-I used a red and yellow because thatās what I had
Tomatoes- I used 3 big green tomatoes and a handful of cherry tomatoes, because once again thatās what I had š¤·āāļø
Onion-I used frozen because I canāt stand cutting onions š§
Garlic-I used 4 cloves
2-3 cups of pumpkin purƩe-depending on how thick you want your chili
Beef broth- I just poured until it looked okay šš¼
1 can of chili beans
1 can of black beans
1 can of tomato sauce or paste if you have it
Olive oil
Chili powder
Red pepper flakes
Instructions:
1.If using pumpkin- cut and gut your pumpkin. Roast in a 400 degree oven, with choice of seasonings (I used salt, pumpkin pie spice, and cinnamon) for around 40 minutes. If you can easily poke a fork into it then itās done. Once done peel the skin off and purĆ©e.
2.pour olive oil in pan and cook veggies (onion,peppers,garlic,tomatoes) until onions are tender. You can also separate if you want. I donāt have that kind of patients, so I just dump them all in.
4. Put in hamburger and brown it.
5.put in chili powder and red pepper flakes
6. Dump in beans and tomato sauce
7. pour in beef broth
8. dump in pumpkin purƩe
9. let cook until you say itās done
10. I served with cinnamon rolls, but you eat it with whatever you like
